Every Christmas we produce a small number of turkeys.
We have chosen two old, unimproved breeds, the Norfolk Black and the Bronze. These arrive in July as organic poults and are fed on our own organic triticale supplemented with organic crumbs. The turkeys grow slowly, ranging over a wide paddock, and act like a bunch of adolescents - they are a real handful to put to bed at night! They are slaughtered here on the farm.
The flavour and texture of these turkeys has re-converted us back to turkey for Christmas!
